Roberto Cantolacqua Ripani, Master Pastry Chef and owner of the pastry shop of the same name, was born in Tolentino, a small town in the Marche hinterland, in 1982. His creations are unmistakable, the neoclassical-style cornetto decorations that adorn cakes for christenings, weddings and special occasions are now very famous. His leavened products, fragrant, fluffy and light precisely thanks to the use of the ancient mother yeast, accompany every time of the year: from the classic Panettone Milanese, to the Colomba Pasquale and the Pizza di Pasqua from the Marche region, to the Panbrillo, an exclusive product characterized by different alcoholic bagne. But that’s not all, the Maestro, a passionate and learned connoisseur of the history of Italian cuisine and beyond, offers a wide selection of cookies in his pastry shop, creating flavor combinations that are unforgettable.
